Reciepe of the month-Plantain Vegetable Porridge

 
Ingredients:
3 Semi-ripe plantains peeled and diced into small pieces
5 Fresh tomatoes finely sliced
3 Fresh peppers finely sliced
1 large Onion sliced
1 tbsp Ground crayfish
Dry fish
Pumpkin leaves
Green (Amaranth) vegetables
10 tbsp palm oil
2 stock cubes
salt to taste  
METHOD:
1) To a pot of boiling water, add your diced plantains. Very little water is used. For 3 pieces of plantain, 5OOml of water is enough for the porridge.
2) Add onions and palm oil and cook for about 3 to 4 minutes
3) Then add your tomatoes, peppers, dry fish and crayfish.
4) Add 2 stock cubes and salt to taste.
5) Cover pot and cook till plantains are soft and the broth is beginning to thicken
6) Add chopped pumpkin leaves and cook for 3 minutes.
7) Add green vegetables and cook for 1 minute.                      
8) Best eaten hot.
